Pani Popo: Hawaiian Dinner Rolls


You know how obsessed I am with coconut :)
So when I discovered these from Roxana's Home Baking, I knew I had to try them.

They're definitely a sweeter type of roll.
It's baked in sweet coconut milk...AHH I just loved these rolls!
After it comes out of the oven, the sweet coconut milk gives it a nice sweet glaze on top.

These are definitely a nice change from the typical dinner roll.

Really Yummy!

Ingredients:

3 c all-purpose flour 
1 1/2 tsp yeast 
1/4 c lukewarm water
pinch of salt
1 Tbsp vegetable or canola oil 
1 can coconut milk 
1/4 to 1/3 c sugar - depending how sweet you like it


Instructions:

  1. In a mixing bowl, sift the flour, make a well in the middle, pour the lukewarm water and sprinkle the yeast on top.
  2. Leave a couple of minutes (about 5) until the yeast is dissolved and bubbles appear.
  3. Add 1 Tbsp oil and a pinch of salt and with the dough hook on, start mixing slowing and adding 3/4 c plus 2 tsp coconut milk until the dough comes clean from the sides of the bowl.
  4. Leave the dough in a oily bowl, covered, to rest until doubled in volume.
  5. When risen, divide it in 8-10 balls and place them in a round or square baking dish.
  6. Cover again and let it rest until almost double in volume.
  7. Meanwhile heat the oven to 375 degrees and mix the rest of the coconut milk with the sugar.
  8. Pour over the rolls, sprinkle some raw sugar on top (optional) and bake for about 40 minutes or until golden brown and the coconut milk is absorbed.

30-Minute Dinner Rolls


Who doesn't love a simple recipe to make homemade rolls?

Well with this recipe, there's hardly any wait and they taste divine.

These rolls come out pretty large so you could even 
divide these rolls and it would make 24 sm/med sized rolls....It's up to you!

This is my favorite go-to recipe for quick rolls...They're slightly sweet and super soft!

ENJOY!

Ingredients:
makes 12 rolls

1 c plus 2 Tbsp warm water
1/3 c oil
2 Tbsp dry active yeast
1/4 c sugar
1/2 tsp salt
1 egg
3 1/2 c bread flour (or all-purpose flour)



Instructions:

  1. Preheat oven to 400 degrees
  2. In a mixer bowl combine 1 c plus 2 Tbsp warm water, 1/3 c oil, 2 Tbsp yeast and 1/4 c sugar.  Let it rest for 10 minutes to allow yeast to activate and bubble.
  3. Using a dough hook, mix in 1/2 salt, 1 egg and 3 1/2 c flour.  Knead with hook until well blended and dough isn't sticking to sides of the bowl.
  4. Form dough into 12 balls and place on a baking sheet lined with parchment paper or silpat.  Let dough balls rest for 10 minutes.
  5. Bake in oven for 10 minutes or until golden brown.

Homemade Bread Bowls

Soup Season is upon us!

And I LOVE Soup!

My mom made the best soups growing up.
She would make various different kinds of soup every Fall and Winter.

And they were delicious E-V-E-R-Y time.
In FACT, she is pretty well-known for her delicious soups 
cause she brings them to church potlucks and stuff.

Okay, now we're going to add Bread Bowls into the mix.
With soup, Bread Bowls really help enhance your experience TIMES 10!
 
And these bread bowls are so Warm and unbelievably Delicious!
I love how soft they are inside.

The best part is there's hardly any waiting when they come out of the oven.
ONLY 1-2 MINUTES, and DIG IN!

Ingredients
makes 4 bread bowls

1 c plus 2 Tbsp warm water (100 degrees F)
1/3 c olive oil
2 Tbsp dry active yeast
1/4 c sugar
1 egg
1 tsp salt
4 c bread flour + 5 pinches of flour


Instructions
  1. Combine 1/3 c olive oil, 1/4 c sugar, 2 Tbsp yeast and 1 c plus 2 Tbsp warm water (100 F). 
  2. Allow yeast mixture to activate for 15 minutes.
  3. Add 1 egg, 1 tsp salt and 4 c bread flour.  
  4. Knead with dough hook for 5 minutes, until dough isn't sticking to sides of bowl.
  5. Sprinkle flour on counter, take out dough and knead for 2-3 minutes until smooth.
  6. Cut dough into 4 sections. Shape dough into round balls.
  7. Line baking sheet with parchment paper.  Place dough balls on baking sheet, cover with clean towel. Place sheet in oven with light on.
  8. Allow the dough to rise for 45 minutes.
  9. Heat oven to 400 degrees.  Bake in oven for 12-15 minutes.
  10. Cool bread bowls on cooling rack for 1-2 minutes.
  11. Cut out center of bowl and FILL it up with Delicious Soup!! 


 Instructions with pictures
Combine 1/3 c olive oil, 1/4 c sugar, 2 Tbsp yeast and 1 c plus 2 Tbsp warm water (100 degrees F).
I microwaved mine for 30 sec and waited 30 seconds.

Allow Yeast mixture to activate for 15 minutes.

Add 1 egg, 1 tsp salt and 4 c bread flour.  

Knead with dough hook for 5 minutes, until dough isn't sticking to sides of bowl.
I sprinkled additional flour on my dough, with 5 pinches of flour to keep it from sticking to the bowl.

Sprinkle flour on counter, take out dough and knead for 2-3 minutes until smooth.

Cut dough into 4 sections. 
Shape dough into round balls.

Line baking sheet with parchment paper 
Place dough balls on baking sheet, cover with clean towel. Place sheet in oven with light on.
RISE dough for 45 minutes.

Heat oven to 400 degrees.
Bake in oven for 12-15 minutes.

Cool bread bowls on cooling rack for 1-2 minutes.

Cut out center of bowl and FILL it up with Delicious Soup!!
I made Chicken Corn Chowder to go with our Bread Bowls.
I got the basic recipe from Pioneer Woman
With mine I added white beans, sweet potato, diced red peppers and chicken!
DELICIOUS!

Breadsticks

 I was most definitely in an Italian mood for dinner.

I decided to make Chicken Parmesan 
and what better to go with an Italian meal than

BREADSTICKS!

These breadsticks are so divine smothered with Butter and sprinkled with Herbs.

And you don't have to wait terribly long for these breadsticks to rise.

Just Delicious!

Enjoy!

Ingredients:
1/2 c warm water (105-115 degrees F)
1 1/8 tsp active dry yeast
1/2 tsp sugar
1 Tbsp olive oil
3/4 tsp salt
1 1/2 c plus 1 Tbsp all-purpose flour
Butter to coat breadsticks
Herbes De Provence, to sprinkle   
(Basil, Marjoram, Thyme, Sage, Savory, Rosemary) 


Instructions:

  1. Heat water to reach between 105 and 115 degrees.
  2. In a large bowl, combine 2 Tbsp of the warm water, 1 1/8 tsp yeast and 1/2 tsp sugar; stir to dissolve. 
  3. Let it stand for 5 minutes or until foamy.
  4. With a wooden spoon, stir in remaining warm water, 1 Tbsp olive oil, 3/4 tsp salt and 1 1/2 c + 1 Tbsp flour.
  5. Knead dough for 10 minutes.
  6. Shape dough into a ball in greased large bowl.  Grease dough as well.
  7. Cover dough with plastic wrap and let rise in oven with light on for 45 minutes, or until doubled.
  8. Roll dough out into a rectangle and cut dough into desired sizes.
  9. Roll dough sticks to round the edges.  Place dough sticks onto baking sheet lined with parchment paper.
  10. Cover with a clean towel, place back into oven with light on for 15-20 minutes for 2nd rise.
  11. Spray or brush with butter, sprinkle with Herbs.
  12. Bake in 400 degree oven for 10-12 minutes. 
  13. Spray or brush breadsticks with butter 2nd time.

Instructions with pictures
Heat water to reach between 105 and 115 degrees.
microwave 20-25 seconds.
 
In a large bowl, combine 2 Tbsp of the warm water, 
1 1/8 tsp yeast and 1/2 tsp sugar; stir to dissolve.

Let it stand for 5 minutes or until foamy.
You'll get a nice foamy ring, picture above.

With a wooden spoon, stir in remaining warm water, 
1 Tbsp olive oil, 3/4 tsp salt and 1 1/2 c + 1 Tbsp flour.

Knead dough for 10 minutes.

Shape dough into a ball in greased large bowl.  
Grease dough as well.
Cover dough with plastic wrap and let rise in oven 
with light on for 45 minutes, or until doubled.

Roll dough out into a rectangle and cut dough into desired sizes.
Roll dough to round the edges.  
Place dough sticks onto baking sheet lined with parchment paper.

 Cover with a clean towel, place back into 
oven with light on for 15-20 minutes for 2nd rise.

Spray or brush with butter.

Sprinkle with Herbs. 

Bake in 400 degree oven for 10-12 minutes. 

After taken out of oven, spray or brush breadsticks 
with butter 2nd time, ENJOY!

Went Perfectly with our Chicken Parmesan dinner last night.

Soft White Bread


I've made plenty of breads before, but never tried making soft white bread.

I was so excited to try this recipe from Annie Eats!

This bread is incredibly soft!

It's perfect for Butter and Jam.
OR
 To make a Sandwich.

And this recipe is quite easy.

The only hard part is waiting. Making bread takes patience!

Ingredients:
makes 1 loaf 

3 1/2 c flour
2 tsp salt
1 c warm milk (microwave 1 minute)
1/3 c warm water (microwave 30 sec)
2 Tbsp unsalted butter, melted
3 Tbsp honey
2 1/2 tsp instant yeast

Instructions:
  1. Preheat your oven to 200 degrees. Leave oven on for 10 minutes, then turn off.
  2. Whisk together 3 1/2 c flour and 2 tsp salt.
  3. Mix 1 c warm milk, 1/3 c warm water, 2 Tbsp butter, 3 Tbsp honey and 2 1/2 tsp instant yeast.
  4. Slowly add liquid ingredients to Flour, On Low with your dough hook, knead the dough for 10 minutes.
  5. Knead dough with hands for 15 seconds.
  6. Oil a glass boil and ball of dough. Place dough in glass bowl and cover with plastic wrap.
  7. Place in oven on bottom rack for 50 minutes or until doubled in size.
  8. Flour your counter, take out dough and form it into a rectangle, 9 inches long.
  9. Roll your dough, lenghwise (like a jelly roll). Pinch seams, to seal dough.
  10. Place seam side down in a 9" x 5" inch bread pan.
  11. Place back in oven for 30 additional minutes, covered with plastic wrap.
  12. Bring 2 c water to boiling. (I microwaved mine for 5 minutes.) Pour into baking dish.
  13. Place baking dish (with boiling water) on bottom rack. Place other rack in the middle.
  14. Preheat oven to 350 degrees. Bake bread on middle rack for 35-40 minutes.
  15. Cover with foil 15-20 minutes into baking.
  16. Remove bread from pan and place on cooling rack until it reaches room temperature to slice.
Instructions with Pictures
Preheat your oven to 200 degrees. Leave oven on for 10 minutes, then turn off.
This is to help rise your dough later.

Whisk together 3 1/2 c flour and 2 tsp salt.

In a separate bowl, mix 1 c warm milk, 1/3 c warm water,
2 Tbsp butter, 3 Tbsp honey and 2 1/2 tsp instant yeast.

Slowly add liquid ingredients to flour, on low with your dough hook, knead the dough for 10 minutes.

Knead dough with hands for 15 seconds.


Oil a glass boil and ball of dough. Place dough in glass bowl and cover with plastic wrap.

Place in oven on bottom rack for 50 minutes or until doubled in size.


Flour your counter, take out dough and form it into a rectangle, 9 inches long.

Roll your dough, (like a jelly roll). Pinch seams, to seal dough.

Place seam side down in a 9" x 5" inch bread pan.

Place back in oven for to rise again for 30 additional minutes, covered with plastic wrap.


Dough should have about this height when done rising.


Bring 2 c water to boiling. (I microwaved mine for 5 minutes.) Pour into baking dish.
Place baking dish (with boiling water) on bottom rack.
Place other rack in the middle.

Preheat oven to 350 degrees. Bake bread on middle rack for 35-40 minutes.
Cover bread with foil 15-20 minutes into baking.

Remove bread from pan and place on cooling rack until it reaches room temperature to slice.
I waited about 1 1/2 hours.

Pretzel Dogs & Smokies


For Blake's birthday I made him his favorite, Pretzel dogs!

This time, I added lil' smokies!

This recipe is so fun for parties and such. 
You can make lil' pretzel smokies, pretzel bites or pretzel dogs!

The steps might seem a little intimidating but it's hard to mess up on this recipe.
I thought I totally bombed it the first time, only to come out perfectly fine.

Ingredients:
makes 5 pretzel dogs 
OR 3 pretzel dogs, 14 smokies

3/4 c warm water (microwave 30 sec)
1 1/2 tsp yeast
1/6 c brown sugar
2 1/4 c flour
5 hot dogs OR (like me, 3 hot dogs, 14 smokies)
3-4 c water
2 Tbsp baking soda
1 egg white, beaten
course salt, to sprinkle

Instructions:

  1. Mix 3/4 c warm water and 1 1/2 tsp yeast. Stir until dissolved. Whisk in 1/6 c brown sugar.
  2. Add 2 1/2 c flour, 1/2 c at a time.
  3. Knead dough for 2-3 minutes. 
  4. Divide dough into 5 balls of dough ( I divided my last two sections into 14 pieces for my smokies)
  5. Stretch dough into an oblong rectangle, long enough to wrap a hot dog.  Pinch ends to seal the hot dog in the dough. Continue for all hot dogs and smokies. 
  6. Fill a medium sized pot with 3-4 c water and 2 Tbsp of baking soda on Medium heat. 
  7. Carefuly place hot dogs into the pot with a spatula or something that will be able to hold most of the dog.
  8. Boil hot dogs/smokies for 30 seconds.  Place dogs on a cooling rack with paper towel underneath while you're finishing with the other dogs.
  9. Place dogs on a greased pan.  Brush dogs with beaten egg white and sprinkle with course salt.
  10. Bake in 475 degree oven for 8-10 minutes.

Instructions with pictures



Mix 3/4 c warm water and 1 1/2 tsp yeast. Stir until dissolved.

Whisk in 1/6 c brown sugar.

Add 2 1/2 c flour, 1/2 c at a time.

Knead dough for 2-3 minutes. No dough should be sticking to the walls of your bowl.


Divide dough into 5 equal sections of dough.
( I divided my last two sections into 14 pieces for my smokies)

Stretch dough into an oblong rectangle, long enough to wrap a hot dog.
Pinch ends to seal the hot dog in the dough. 
Continue for all hot dogs and smokies.

Make sure your counter is nicely floured so the dough doesn't stick!




Fill a medium sized pot with 3-4 c water and 2 Tbsp of baking soda on Medium heat. 
(Your water should become a little frothy, that's when you know the water is ready.)

Carefuly place hot dogs into the pot with a spatula 
or something that will be able to hold most of the dog.
I used a fork first time I did this and it almost fell apart...eek!

Boil hot dogs/smokies for 30 seconds.  

Place dogs on a cooling rack with paper towel under neath while you're finishing with the other dogs.


Place dogs on a greased pan.  Brush dogs with beaten egg white and sprinkle with course salt.

Bake in 475 degree oven for 8-10 minutes.

Cinnamon Bagels

This is for all you daring bakers out there!
So little ingredients, but so many steps!
Enjoy!

Ingredients 
makes 12 bagels

3 1/4 c bread flour
2 tsp salt
2 tsp sugar
2 tsp ground cinnamon
2 tsp dry yeast
1 Tbsp vegetable oil
1 egg, beaten, for glazing

Instructions:
  1. Whisk together 3 1/4 c bread flour, 2 tsp salt, 2 tsp sugar and 2 tsp ground cinnamon.
  2. Pour 2 tsp yeast in 1 3/4 c of warm water. Stir yeast carefully until dissolved. Let it sit for 5 minutes.
  3. Stir in 1 Tbsp vegetable oil into yeast mixture.
  4. Pour yeast mixture into flour bowl, stir carefully.
  5. Add dough to heavily floured surface. Knead for 5-10 minutes.
  6. Place dough back into clean, oiled (vegetable oil) bowl. Cover bowl with plastic wrap and place in a warm area for 1-2 hours.
  7. Take out dough and knead it a little bit.  Divide dough into however many bagels you want.
  8. Roll each section into a log. Wrap the dough around your fingers.
  9. Pinch the ends together to seal it. Place on baking sheet lined with parchment paper.
  10. Cover with plastic wrap and a clean kitchen towel. Place in a warm place. Let it rise for an additional hour.
  11. Fill a pot with water to simmering. Poach dough on each side for 1 minute. Pat dry with clean kitchen towel.
  12. Brush whisked egg on top of bagels.
  13. Preheat oven to 425 degrees and bake for 20-25 minutes.

I turn my oven light on and stick it in the oven.


Take out dough and knead it a little bit.
Divide dough into however many bagels you want.


Roll each section into a log.


Wrap the dough around your fingers.
Pinch the ends together to seal it.


Place on baking sheet.
(lined with parchment paper)
Cover with plastic wrap and a clean kitchen towel.
Place in a warm place.

Let it rise for an additional hour.


Fill a pot with water to simmering.
Poach dough on each side for 1 minute.


Pat dry with clean kitchen towel.


Brush whisked egg on top of bagels.

Preheat oven to 425 degrees and bake for 20-25 minutes.
