Whoopie Pies


Whoopie pies are so fun to make because they can be so versatile.  

You can put anything you want in them.  I was immediately drawn to Raspberry jam, Coconut and Mini chocolate chips, giving me 3 different kinds of whoopie pies!  

This recipe is super easy.  
Just make sure to either use a silpat or parchment paper so the cookies don't stick!

Have fun with it!

Ingredients:
Makes 18-20 pies

12 Tbsp unsalted butter (softened)
3/4 c light brown sugar
1 large egg (at room temp)
1 tsp vanilla extract
2 c all-purpose flour
2/3 c cocoa powder
1 tsp salt
2/3 c whole milk
2 Tbsp Greek yogurt or thick plain yogurt

Frosting
7 Tbsp unsalted butter (softened)
1 c powdered sugar
1 tsp vanilla extract
2 tsp whole milk

Mix-ins/ Toppings
Mini chocolate chips
Sweetened coconut
Raspberry jam (seedless)

Instructions:

  1. Cream 12 Tbsp butter and 3/4 c brown sugar until fluffy.
  2. Beat in 1 egg and 1 tsp vanilla.
  3. In a separate bowl, Sift 2 c flour, 2/3 c cocoa powder and 1 tsp salt. Whisk together.
  4. Mix the dry ingredients into the batter alternately with the whole milk (2/3 c) by spoonfuls.
  5. Fold in 2 Tbsp of yogurt.
  6. Put Tablespoons of batter onto baking sheets (with parchment paper).
  7. Grab a spoon and a small dish with warm water.
  8. With spoon, smooth down the tops of the dough.
  9. Bake in 350 degree oven for 12 minutes
  10. Frosting: Beat 7 Tbsp butter, 1 c powdered sugar, 1 tsp vanilla and 2 tsp whole milk until fluffy.

Now Frosting
Beat 7 Tbsp butter, 1 c powdered sugar, 1 tsp vanilla and 2 tsp whole milk until fluffy.

Here's the fun part! 
For a 1/3 of my pies I did:
A thin layer of raspberry jam with frosting.


Mini chocolate chips mixed in to the frosting.

And (a different batch) sweetened coconut mixed in to the frosting.

My favorite was the Raspberry Jam/ Frosting combo!
SO DELICIOUS!

  1. Yummm...im totally making this recipe..but instead use real rasp/straws and I never thought of the mini choco chips!!!
