This week I made a Slow Cooker Chicken and Vegetable soup! So I decided to make some CHEESY biscuits seasoned with rosemary to go along with our dinner!
This recipe is perfect for a small family. It only makes 4---which I LOVE! So if you want more, then just double the recipe
Ingredients:
3/4 cup flour
3/4 tsp baking powder
pinch of baking soda
pinch of salt
2 Tbsp cold butter
1 Tbsp honey
1/4 c buttermilk
1/4 c of cheddar cheese
2 tsp rosemary
Instructions:
- Add 3/4 c flour, 3/4 tsp baking powder, pinch of baking soda, pinch of salt and 2 Tbsp of cold butter.
- Cut butter in with knife or use hands to crumble it up into flour mixture.
- Store bowl in refrigerator for 15 minutes.
- While you're waiting, whisk together 1/4 c buttermilk to 1 Tbsp honey in a small bowl.
- Pour buttermilk/honey mixture into flour.
- Mix in 1/4 c of cheddar cheese and 2 tsp of rosemary.
- Flour your counter and roll dough into a ball.
- Roll dough out into a rectangle and fold it in thirds (like your folding a piece of paper into an envelope)
- Now fold it again into thirds. (see pictures to get a better idea)
- Roll out dough to 3/4 of an inch thickness.
- Cut the dough with a round cookie cutter or glass.
- Place dough onto parchment-covered baking sheet.
- Bake biscuits in oven at 410 degrees for 10 minutes or until golden.

If you don't have buttermilk in your fridge (like yours truly), pour a Tablespoon of lemon juice into a liquid measuring cup. Add milk to the 1-cup line. Wait 5 minutes and then add 1/4 c of that to the honey.
This is a really simple technique to use when you don't have buttermilk, which I hardly ever do.

Mix until just combined.
Shred up some cheddar cheese.
Add 1/4 c of cheddar cheese and 2 tsp of rosemary.
Mix until just combined.
Flour your counter and roll dough into a ball
