Birthday Cake Cookies


My absolute favorite ice-cream is Birthday Cake Remix at Coldstone. 

I wanted to create a cookie just like my favorite ice-cream!

These cookies do just the trick! 

Now you don't have to make a trip to Coldstone 

OR 

wait until your birthday to eat birthday cake! 

These are scrumptious!

Ingredients:
makes 40 cookies

1/2 c butter (room temp)
1/2 c shortening (room temp)
2 eggs
3/4 brown sugar
1/4 sugar
1 tsp vanilla
1 1/4 c flour
1 1/4 c French Vanilla Cake Mix
1/2 tsp baking soda
1/2 tsp corn starch
1/2 c sprinkles
1/2 c mini chocolate chips


Instructions:

  1. Beat 1/2 c butter, 1/2 c shortening, 2 eggs, 3/4 c brown sugar, 1/4 c sugar and 1 tsp vanilla.
  2. Mix in 1 1/4 c flour, 1 1/4 c french vanilla cake mix, 1/2 tsp baking soda and 1/2 tsp corn starch.
  3. Mix in 1/2 c sprinkles and 1/2 c mini chocolate chips.
  4. Refrigerate dough for 30-45 minutes.
  5. Scoop Cookie dough on Silpat or parchment paper.
  6. Bake in 350 degree oven for 11-12 minutes.

Instructions with pictures:

Mix in 1/2 c sprinkles and 1/2 c mini chocolate chips.
