Banana Peanut Butter & Chocolate Chip Cookies


I have definitely perfected this cookie! Blake had 5 cookies in a row!  These cookies are so delicious....maybe my BEST cookie yet!


Ingredients
makes 3 dozen cookies

1/4 c butter (room temperature)
1/4 c shortening (room temperature)
1 c sugar
1 egg (room temperature)
3 very ripe bananas (medium size)
1 tsp baking soda
2 c flour
1 tsp cinnamon
1 1/4 c Peanut Butter/ Chocolate Chips (mixed) 

Instructions:

1.  Beat 1/4 c butter, 1/4 c shortening and 1 c sugar until light and fluffy (about 2 min).
2.  Add 1 egg, beat until light and fluffy.
3.  In a separate bowl mash 3 (medium) bananas.
4.  Add 1 tsp baking soda to banana mixture. Let it sit for a few minutes to activate the bananas.
5.  Pour banana mixture into sugar/butter mixture.
6.  Add 2 cups of flour and 1 tsp cinnamon. Mix until just combined.
7.  Add 1 1/4 c of peanut butter/ chocolate chips.
8.  Preheat oven to 350 degrees and bake for 11 minutes.



Instructions with pictures:

Beat 1/4 c butter, 1/4 c shortening and 1 c sugar until light and fluffy (about 2 min).

In a separate bowl mash 3 (medium) bananas.



Add 1 tsp baking soda to banana mixture. Let it sit for a few minutes to activate the bananas.
This will help your cookies rise.


Pour banana mixture into sugar/butter mixture.



Add 2 cups of flour and 1 tsp of cinnamon. Mix until just combined.
You never want to over mix batter that has bananas in it.  
Makes it too tough and spongy.


Add 1 1/4 c of peanut butter/ chocolate chips.



Preheat oven to 350 degrees and bake for 11 minutes.



Top cookie with additional peanut butter/ chocolate chips.
Don't wait. Pop these suckers right into your mouth!  It's Heaven!

These cookies are so tempting--I had 2 and ate the last bit of the cookie dough!  
This is the tastiest cookie dough for all you cookie dough LOVERS!
