Chocolate Raspberry m&m Cookies



I've been wanting to try those Raspberry m&m's for a while so I thought why not put it into a chocolate cookie!  I LOVE these cookies.  They are the most delicious cookies right out of the oven!  

One of the cookies broke as I was transferring it to the cookie rack.... "Aw shucks." 

Actually, it's the perfect excuse for me to eat it right away. We would always do that at Subway (back in college days).  *Sigh* that was the best because no customer wants a broken cookie!


Ingredients
makes 22-24 cookies

1/4 c butter (salted, room temperature)
1/4 c shortening (room temperature)
1/8 c sugar
3/8 c brown sugar
1 egg
1/2 tsp vanilla
1/4 c of instant chocolate pudding mix
1 1/8 c flour
1/2 tsp baking soda
8 oz bag of Raspberry m&m's

Instructions:

  1. Beat 1/4 c butter, 1/4 c shortening, 1/8 c sugar, 3/8 c brown sugar, 1 egg and 1/2 tsp vanilla.
  2. Add only 1/4 c instant chocolate pudding, 1 1/8 c flour and 1/2 tsp baking soda.  Mix until just combined.
  3. Add 1/2 c of Raspberry m&m's and mix gently with spatula.
  4. Preheat oven to 350 degrees and bake for 10 minutes.
  5. When cookies come out, immediately top cookies with more m&m's.
  6. Let cookies rest on baking sheet for 3 minutes then transfer to cooling rack.


Instructions with pictures

The candies make a cool crackling sound when you place them on the hot cookies :)



Let cookies rest on baking sheet for 3 minutes then transfer to cooling rack.




These m&m's are tasty but they are so much better with a chocolate cookie!
