Peanut Butter and Jelly Cookies

I LOVE Peanut Butter and Jelly sandwiches.  So I decided to turn it into a cookie!  


Ingredients
Makes 40 cookies

1/2 c unsalted butter (room temperature)
1/2 c shortening plus 1/2 teaspoon
1/4 cup sugar
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla
5.4 ounce box instant vanilla pudding
2 1/4 cups flour
1 teaspoon baking soda
3/4 cup of seedless strawberry jam
3/4 cup of peanut butter chips

Instructions:

  1. Beat together 1/2 c butter, 1/2 c shortening, 1/4 cup sugar, 3/4 cup brown sugar.
  2. Add 2 eggs and 1 tsp of vanilla.
  3. Add instant pudding mix.
  4. Add 2 1/4 cups of flour. Mix everything together.
  5. Bake in the 350 degree oven for 10-11 minutes.
  6. Pour 3/4 cup of Strawberry Jam into saucepan and cook on low.  Stir until smooth.
  7. Pour 1/2 teaspoon onto each cookie.
  8. Measure 3/4 c of peanut butter chips and 1 tsp of shortening and cook on low in saucepan.  Stir until smooth.
  9. Pour Peanut butter icing into a bag, cut small corner. Decorate cookies.


Instructions with pictures


Add 1/2 c butter, 1/2 c shortening, 1/4 cup sugar, 3/4 cup brown sugar to the bowl.




Cream together.  




Add 2 eggs and 1 tsp of vanilla.




Add instant pudding mix.




Add 2 1/4 cups of flour.




Mix all together until just combined




Scoop onto cookie sheets, 2 inches apart.




Bake in the 350 degree oven for 10-11 minutes.



Pour 3/4 cup of Strawberry Jam into saucepan and cook on low.  Stir until smooth.




Pour 1/2 teaspoon onto each cookie.




Measure 3/4 c of peanut butter chips and 1 tsp of shortening and cook on low in saucepan.  Stir until smooth.

 Perfect combo of Peanut butter and Jelly on a cookie!
