Cinnamon Bagels

This is for all you daring bakers out there!
So little ingredients, but so many steps!
Enjoy!

Ingredients 
makes 12 bagels

3 1/4 c bread flour
2 tsp salt
2 tsp sugar
2 tsp ground cinnamon
2 tsp dry yeast
1 Tbsp vegetable oil
1 egg, beaten, for glazing

Instructions:
  1. Whisk together 3 1/4 c bread flour, 2 tsp salt, 2 tsp sugar and 2 tsp ground cinnamon.
  2. Pour 2 tsp yeast in 1 3/4 c of warm water. Stir yeast carefully until dissolved. Let it sit for 5 minutes.
  3. Stir in 1 Tbsp vegetable oil into yeast mixture.
  4. Pour yeast mixture into flour bowl, stir carefully.
  5. Add dough to heavily floured surface. Knead for 5-10 minutes.
  6. Place dough back into clean, oiled (vegetable oil) bowl. Cover bowl with plastic wrap and place in a warm area for 1-2 hours.
  7. Take out dough and knead it a little bit.  Divide dough into however many bagels you want.
  8. Roll each section into a log. Wrap the dough around your fingers.
  9. Pinch the ends together to seal it. Place on baking sheet lined with parchment paper.
  10. Cover with plastic wrap and a clean kitchen towel. Place in a warm place. Let it rise for an additional hour.
  11. Fill a pot with water to simmering. Poach dough on each side for 1 minute. Pat dry with clean kitchen towel.
  12. Brush whisked egg on top of bagels.
  13. Preheat oven to 425 degrees and bake for 20-25 minutes.


Instructions with pictures

I microwaved the water for 30 sec.


Stir yeast carefully until dissolved.
Let it sit for 5 minutes.



Stir in 1 Tbsp vegetable oil into yeast mixture.


Pour yeast mixture into flour bowl.


Stir carefully.


Add dough to heavily floured surface.
Knead for 5-10 minutes.


Place dough back into clean, oiled (vegetable oil) bowl
Cover bowl with plastic wrap and place in a warm area for 1-2 hours.
I turn my oven light on and stick it in the oven.


Take out dough and knead it a little bit.
Divide dough into however many bagels you want.


Roll each section into a log.


Wrap the dough around your fingers.
Pinch the ends together to seal it.


Place on baking sheet.
(lined with parchment paper)
Cover with plastic wrap and a clean kitchen towel.
Place in a warm place.

Let it rise for an additional hour.
