Nutella-Swirl Banana Chocolate Chip Bread


I love seeing ripe bananas in the kitchen.  They inspire me to make something every time.  This time I decided to make a Nutella-swirl Banana Bread with Mini Chocolate Chips. YUMMM!  I love mini chips, it's not too overpowering for the banana flavor you want to taste in every bite.

I like to substitute healthy ingredients as often as I can in recipes.  For baking breads a healthy substitution for butter is Applesauce! You can also use olive oil or any fruit puree.  I decided to use applesauce.  If you rather use butter, it's the same measurement :) 



Ingredients:

1/2 cup of Applesauce
3/4 cup of brown sugar
2 eggs
1 tsp vanilla
3 very ripe bananas
2 cups of flour
1 tsp of baking soda
1 tsp of cinnamon
1/4 tsp of salt
1/2 cup of mini chocolate chips
2 Tbsp of Nutella

Instructions:

  1. Mash 3 bananas with a potato masher.
  2. In a separate bowl, Add 1/2 c applesauce, 3/4 c brown sugar, 1 tsp of vanilla and 2 eggs. Mix together.
  3. Add mashed bananas to wet ingredients. Mix until just combined.
  4. Add 2 cups of flour, 1 tsp baking soda, 1 tsp cinnamon and 1/4 tsp salt.
  5. Add 1/2 cup of mini chocolate chips. Mix until just combined.
  6. Pour 1/2 of banana mixture in greased 9" x 5" loaf pan.
  7. Add 1 Tbsp Nutella and swirl with knife.
  8. Add Remaining banana mixture and repeat Nutella swirl on top!
  9. Bake in 350 degree oven for 55 minutes or until toothpick comes out clean.

Let it sit in pan for 10 minutes...Should fall right out, ENJOY!



The Nutella on top created a delicious, candy crunch!
