This is one of my favorite meals my mother-in-law makes.
It's so delicious!
I've even requested this meal as a birthday dinner!
It's Super cheesy and I love the variety of veggies cooked into the beef.
Also, this meal is really, really easy to make!

Ingredients:
serves 6
2 lbs. beef
1/2 onion, diced
1/2 green pepper, diced
1 (7 oz.) can of mushrooms, diced
3 med. sized tomatoes, diced (be sure to save juice too)
1 (4 oz.) can of green chiles
2/3 c shredded cheddar cheese
2/3 c shredded mozzarella cheese
6 pita pockets
Instructions:
- Brown beef. Add 1/2 onion, diced and 1/2 green pepper, diced. Allow onion and green pepper to get soft.
- Add 1 can of mushrooms (diced), 3 med. tomatoes (diced) and 1 can of green chiles. Cook for 8-10 minutes to allow juices of tomatoes to cook down.
- Add 2/3 c cheddar cheese and 2/3 c mozzarella cheese. Stir until well blended.
- Microwave pita pockets for 20 seconds.
- Fill pita pockets with cheesy beef mixture.
